This recipe inspired by Lori (AmethystButterflyGrl) !

Pasta sauce:

6 slices of bacon
1 large onion chopped
1 cup green or red peppers chopped
2 to 4 cloves of garlic minced
salt and pepper to taste
1 cup of mushrooms chopped
1 can tomatoes (diced or whole)

Fry bacon until crisp, remove from pan. Drain off all but 1tsp of fat.
Add onion,peppers, mushrooms, garlic and salt and pepper, add crumbled bacon, saute on medium heat until onions are beginning to get clear and soft.
Add the tomatoes and simmer on medium until veggies are soft and tomatoes have broken down a bit.
(about 15-20 minutes)

Meatballs

1 lb of lean or extra-lean hamburger meat
about 20 small cubes of mozzarella cheese or 20 mini bocconcini (deli counter)
1/4 cup dried breadcrumbs
salt and pepper to taste
1/8 cup milk
1 lightly beaten egg

Mix egg,milk, meat, salt, pepper, breadcrumbs in a bowl until blended.

Take about an egg sized amount of hamburger mix and press into a round disk shape, put a piece of mozzarella in the middle and press meat around it to make a meatball.
Seal edges carefully.

Brown meatball in a skillet or in oven or place them directly in the simmering sauce, cover and simmer on low until cookes about 20-30 minutes. Gently turn the meatballs occasionally to cook them evenly.

Some of the meatballs may crack and cheese will ooze out.
