Pamela, thanks so much for your quick reply! Last question - after you put the now cut yams in the pot and all the ingredients into the mix, how much water should you add if any?

just got the message, I hope it's not too late. I don't add any water just the sugar and butter. With the orange juice that should be all you need. If you like more liquid, feel free to add more juice. Enjoy!
