I reckon Castle's being tactical about his progression with her now, instead of calling her out on what he saw and teasing her - he's playing it cool/hard-to-get and letting her own emotions boil over :D

Her response followed by his 'Kay' as he turns to walk away, makes no sense if he said that.
If she had said 'um-hum' if he had said that, he wouldn't have said 'Kay' and walked away.
From the scene, you can deduce that he's slurring something along the lines of 'So, tomorrow', like xMusiicxAddictxx said, and it ends up being someting like, 'Soo-morrow?" or Sa-morrow if he was slurring 'See you tomorrow.'
