I don't like to measure when I cook, either. Effort.
It must have been difficult to make tempura out of the shiso because it's so thin. If I was making it, each shiso leaf would be an unrecognizable fried clump!

You're only suppose to batter one side of the shiso leaf. The other side is suppose to be kept green.
