【材料】:草魚 1尾、薑 1塊、蔥 1支、太白粉 適量【調味料】:鎮江醋 4大匙、糖 3大匙、醬油 2大匙、酒 1大匙、鹽 1小匙【做法】:1、草魚對半切後,將骨切斷後,翻面劃上兩刀。2、滾水中放入蔥、薑、酒,把魚放入燜煮3-5分。3、薑切細絲、蔥切段。4、起一油鍋,爆香蔥、薑,等香氣出來後,再把蔥、薑撈出;5、魚湯放入炒鍋中,加入鹽、醬油、糖、酒煮滾後,加太白粉水芶芡,再加入醋煮滾熄火,即完成「醬汁」。6、將魚撈起盛盤,擺上薑絲,淋上醬汁,即完成「西湖醋魚」。
