I think the reason he is resting his chin on the fretboard is because of the extra strings. He doesn't want the to resonate over what he is playing at certain parts. All he is doing is dampening the strings.

This performance of Haydn is the best argument I have seen/heard for the advantages of an 8-string guitar over 6. Beautifully played.

This is fabulous playing. Forget the chin this guy is a true musician not a clown. Great musicality, good form, perfect sense of style, can we ask more?
Does the beard produce better tone when fretting the bass notes?

He uses his chin to get the wider range of tones and that allows him to play notes he couldn't normally reach with his left hand fingers.
