what does 720p mean?

720P means, 720 vertical lines, progressive, as opposed to interlaced.

Thank you! I imported & logged the footage with Final Cut Pro, which converted it to AppleProRes. Then I edited in FCP and compressed to MPEG4 Quicktime (.mov) using Compressor. (I think the same output can be achieved with QT Pro.) I used 720P, Best Quality output, which resulted in a 500MB file, which I uploaded to YouTube.
