I have only refurbished a couple of pipes with screw-on stems accompanied by stingers. I covered them with vaseline just to be sure it wouldn't eat away at it, causing a loose fit. Otherwise, I would simply use alcohol to clean the metal thoroughly.
So, basically, I don't know whether or not bleach would have negative effects on the metal because I didn't take that chance.

Any suggestions what will work well for acrylic stems? What about an amber stem?

I've found alcohol bath+lots of bristled pipe cleaners works really well for acrylic stems.
I'm not sure about amber stems...
