This is how I make Sauerkraut for my family.
Steve Style PT 1

  • @astrialkil I have fermented 100% red cabbage and it worked fine, but red cabbage tends to have a lower sugar content than green, so the fermentation will be less vigorous.

  • I have read that U should NEVER ever! use red cabbage for Sauerkraut as red is not alkaline enough to keep the bad yeast,mold,bacteria out.

    do U have any info on this? have U ever tried 100% red Sauerkraut? do u have to mix the green and red?
