i usually drink a 2oz espresso shot , but my friend tells me the way they do it in Italy is shorter , stronger and much creamier . it's called a ristretto shot , and to get a 0.5 or 0.75 oz shot in 25-30 seconds you have to play with the grind and tamp quite a lot . the coffee is french-italian roast from Porto Rico Importing Co , the grinder is Baratza Virtuoso (at 7 ) and the machine is Gaggia Classic and the camera is the iphone 4 ;) . the shot was very creamy , I wonder if I can do it again the same way every time

  • I always feel a bit freaked out when I choke my Gaggia this much. The result is good, but I feel the machine is getting put under a lot of pressure.I can't afford to replace it if I screw it either.

    30 seconds seems a little long even for a ristretto but it looked good. How's the taste?
