Have fun on a Friday evening with this vegan fajitas recipe and a table full of fun fajita fillings in this latest of my healthy vegan recipes. We'll center these fajitas around some spicy glazed tempeh, and create a fresh salsa to pull the vegetables together.

  • I really like your recipes because they are healthy, yet inexpensive and easy to make. I would really love to try this recipe, but I'm a bit worried about the tempeh. I've only had it once, and it had a really weird moldy flavor. Although I like moldy cheeses (I'm still vegetarian, not vegan), it was too much for me. Do you think it was the tempeh that I bought, or the fact that I didn't really do anything with it. I know that with tofu preparation is key.

  • @1029blue Thanks, so glad you like the recipes! On tempeh, it should not taste moldy. I'm pretty mold-phobic, so I wouldn't eat tempeh if it tasted moldy at all. I would think that you probably got either a bad package or one with a strange seasoning. I generally don't do anything with my tempeh when I take it out of the package - this recipe is one where I did, but I often just cube it and put it in a salad. Some tempehs are flavored and some aren't - I buy flavored ones. Hope that helps!

  • @healthyvegan Thank you so much. It must have been because mine didn't have any flavor. What I tasted might have been the "fermentation", since I already read that there's a good amount of people who don't like tempeh. I'll get some flavored tempeh and see how that works. :)

  • alternatively you could used baked extra firm tofu, but tofu lacks the texture and unique flavor of tempeh imo :D

    you can cut the tempeh up, and then steam them for 15-20 minutes to take off the bitter edge.

    i always prepare tempeh this way and it makes the aftertaste much more mild.
