@Zukoyomi In Asain culture, it's a term used form respect. For example, if the person is old enough to be you parent, you call them auntie or uncle (Or even granny or grandpa if they're old enough). You don't have to be related.

She calls him uncle Jet in the game too. He's probably not really her uncle, since that would make Joe and Silvia cousins. It's probably just a pet name.

If you're talking about music from the games, the complete soundtrack for both games has been released on CD in Japan. You can sometimes pick it up on ebay, or you might be able to buy it from an importer. It also has a booklet with a complete English script for both games. Make sure you get the two disc set with VJ + VJ2 and not the Geneon single disc CD.

It's an old Capcom in joke from way back in the NES days. No one knows what it originally meant for sure. It might be one of the original developers' initials, or a nickname.
In the case of Viewtiful Joe, one of the posters in VJ1 has the words 'His Master's Dance' on it, so in this case that's likely what it means.
