How to make whole wheat muffins from left over wheat and bananas...For more tips, free recipes and help go to: http://www.eatgrains.com

Dry Ingredients:
2.5 C Freshly Milled Whole Wheat Flour
1/2 C Organic Sugar
2 tsp baking soda
1/2 -1 tsp baking powder
1 tsp cinnamon
1/2 tsp all spice
1/2 tsp salt
1/4 tsp nutmeg
1/2 C pecans or walnuts

Wet Ingredients:
2 previously frozen bananas, thawed with juices
1/2 C soured milk or buttermilk
1 egg
1 tsp vanilla extract
1/4 C oil

Follow the steps in the video mixing dry all together, mix wet all together then combine both.

Spoon into sprayed muffin tins and bake at 400 for 20 minutes

  • If I may make a suggestion, I will. I would use the flour that has been around longer to use that up first. Once you have made what you need, dump the recently milled flour in, and you will have used mored of the older flour. Maybe thats just me but thats what I would do.

  • @16hilltyKMS ~ Ahhhh I see what you're saying. Good point. The fact is that I forget about the freezer flour until I'm staring at the tiny bit left from the fresh flour then I just keep adding.

    But now that you've mentioned it, it may just jog my memory!

  • I am eating one of these muffins right now. Delicious. I had buttermilk, so I used that and I didn't have dough enhancer, so I had to leave that out, but they turned out great. Thanks for the recipe.

  • Great 'tweak' to use buttermilk!! Gives it a bit more body and likely a little more 'fluff'' too!

    The enhancer is often omitted here because the food is GONE so fast the little help the lecithin and vitamin C gives it to last longer doesn't matter...we can polish a dozen muffins at breakfast (family of 5) easily!
