Without Rom, the bar would fall apart, literally. There is an episode where Rom and the whole staff quits, and Quark has to run around like crazy to keep the bar working.

Not sure what Rom's problem is, it IS Quark's bar and Quark DOES handle all of the business.
What does Rom do to earn his share exactly? I'd wager to say that Quark is actually being very generous to Rom.
