This is the Sinn 757 S pilot's chronograph. Sinn is a German watchmaker who is not well known in the US, but makes excellent watches.

The process is likely Ferritic nitrocarburizing. Its how they make process gun barrels. Its basically a high temp salt bath and quench to change the metals surface structure which hardens it.

"S" is used on the watches with the PVD coating, but "S" actually stands for schwartz which is german for "black"
