WOW ...what a great way to roast a turkey! Spatchcock Turkey ... it's a "butterflied" turkey ..split down the center and then roasted flat .... the benefits?
1. Flavor ... it picks up the charcoal flavor really good ..the flavor really permeates through the meat ..and it now overpowering
2. Cook time - usually under 2 hours for a tender, 15 pound fresh turkey.
3. Even Cooking - breast and the "rest" of the turkey get done together .. No more drying out the breast meat trying to get the rest of the turkey to be fully cooked.
