Time limits for go were unlimited until early 20th century in go. There is e.g. a famous game between go sei gen and honinbo shusai. Shusai did not play any move on one occasion. That was off course to discuss the move with his best students. Si I think unlimited time probably also for shogi . Btw Honinbo Sansa was first go professional.

Yes, that's exactly how the thinking time is for Meijin title match.
But how about the games in the 17th century? I have no idea. I think that's what MEEP012 is asking.

Of course, for example 2 days with 9 hours per day and 60sec for every move after this time (I think Meijin title matches are something like this). The last move of the first day is sealed. This is really interesting :)
By the way, in this video's description, you misspelled Soukei Ohashi's name as Souko.
