I actually did use CHL players to "fill in" the roster spots when I didn't have enough alumni. For Wisconsin and Minnesota I had enough actual alumni in the NHL/AHL, so I used them. But for smaller schools like St Cloud State and Michigan Tech, there weren't enough alumni players in the pros, so I filled in the remaining spots with CHL guys.

No, not for NHL 11...
EA Sports has block lettering as a logo option for the NCAA Team Builder, but not for the NHL series. I'm really hoping that they give us block lettering in the upcoming NHL 12! The create-a-team and the EAUHL would be so much more fun with a lot more logo options.
I'm actually editing a PC version of NHL 09 into NCAA Hockey 12, message me if you'd like to see some of my work, unfortunately no videos yet.

Making the uniforms takes about 10-15 minutes for each team. Doing the rosters takes about 20-30 minutes per team, using hockeydb.com to find all of the alumni of each school on their current pro teams.

No, you can not name teams whatever you want. You have to use cities and nicknames from a list that EA Sports gives you. The list isn't all that impressive and doesn't include the 50 states. I'm hoping they add that feature for next year, along with many more nickname choices.
