This easy Spinach Artichoke Chicken Casserole was inspired by that delicious spinach artichoke dip that so many of us love devour on the buffet table. This variation transforms that tasty appetizer into an easy to make lighter weeknight meal that everyone is sure to love. Lean chicken breast, spinach and artichokes come together in a flavorful lighter sauce to make this dish not only healthier but easy to quickly throw together with ingredients that you probably already have in the pantry and freezer.

Ingredients list
• 12 oz chicken, chopped into small pieces
• 8 oz short pasta, ziti
• 10 oz package of frozen spinach, defrosted and drained
• 14 oz can of artichoke hearts, quartered
• 2 cloves garlic, finely chopped
• 1/3 cup pecorino Romano cheese
• ½ cup sour cream
• ½ cup cheddar
• ½ cup cream cheese softened
• 2 tbsp light mayonnaise
• 1 cup milk
• 1tbsp of olive oil
• salt and pepper to taste

  • YUM i want to try this, so the artichokes, they are not marinated, where can you get those?

  • @ljewkes You can get the artichokes in the supermarket canned and packed in liquid. You just don't want the jarred ones that are already seasoned like you might use in an antipasto platter. They also sell frozen quartered artichoke hearts that you could use if you defrost them first.

  • @AsianCookingmadeEasy Thanks Lila. I thought it was delicious. My daughter on the other hand thought it would have been better without no spinach or artichokes. lol ... she's a picky eater at times.
