This is my first attempt at a YouTube video. It is also my first attempt at doing a spatchcock (butterfly) chicken.

I've been doing a lot of chicken lately, mostly thighs & legs. Last weekend we spent the day picking peaches at a farm on the Virginia/West Virginia border. While speaking to one of the folks that run the farm, I found out that they had a huge pile of pruned out branches from their peach trees. I also found out I could have as many as I could haul.

For smoking chicken, I have always loved apple wood. Well, now peach wood is where it's at for me. Along with a Cherry BBQ glaze they sell at the country store at the farm, I have turned out the best chicken I've ever made. So how to take it a step further? By copying Harvey's spatchcock/bacon chicken, using peach wood, and stuffing the breasts with peaches. And boy was it grand! It was the juiciest breast meat I've ever turned out!

    I dont know how to smoke meats, but I sure want to learn now!

    What was the seasoning used on the chicken?

  • 1. It was my first butterfly attempt. I've gotten better :)

    2. I've tried both now, and the knife works best for me, now that I've had practice.

    4. If you watch again, you'll see me vanish to get the seasoning and wash. There is an obvious cut in the video then.

    5. The seasoning I used was one of the Dizzy Pig seasonings, I can't remember which one offhand. Some day, if I get the energy and time to do another video, maybe I'll do the beans as well.

  • You mentioned in your video that you could use fruit. And with the whole peach picking, peach wood, farm thing, I thought "why not?". Man was it great. This will now be a regular addition to our menu!

    Also, there are knives especially made for cutting chicken....hehehehe ;-).

    And, I love your choice of music.

  • I though on several occasions there that you were going to loose a finger!

    Place a damp cloth or something similar under your chopping board to stop it slip-sliding around! Reduces the risk of injury during food prep.

    You may also want to remore the cartilage from underneath the breasts.
