You're slightly off point.

Slade contrasts to his nephew by being dirty mouthed, inelegant, and boorish.

The nephew is politically correct, elegant, and has manners.

Those are their exteriors. But Slade is the 'better' 'man' of two inside because Slade demonstrated in this scene that he's straightforward and carries weight for his actions while the nephew is petty, petulant, conniving, and disgraceful.

Slade showed honor behind his ugly exterior while the newphew did the opposite.

I watched this scene trying to make sense of it, and all I can come away with is this; even though Slade is indeed an asshole, he is still more man than his his clever smart-mouthed nephew. He asks, "what kind of fucking lunatic juggles grenades?", knowing full well he could never do such a thing, or in fact lead a warriors life as Slade has done. So he couches his criticism in smug intellectual superiority in order to cover the fact that Slade, even blind, makes him feel like less of a man.
