Well, like most of the great pop orchestra directors, Ray Conniff started by writing arrangements and doing back up chorals/music for well known singers. The 1955 version, the first one released, was arranged by him, and the chorus led by him. Yet, the main interpreter was Mindy Carson. Conniff didn't start releasing albums as an independent performed until 1957, and his version (without singer) of Memories Are Made of This indeed dates from 1961.

Actually, according to Second Hand Song, this version is the original, and that everybody else, including Dean covered this song. But it depends of whose right SHS has the year of this version as 1955, a year before Dean's, but Wikipedia has the year as 1961.
