Sos Pwa (red Bean Sauce) Recipe, Courtesy of "A Taste of Haiti"

2c dried kidney beans or pinto beans
1 tbsp oil
1/4 green bell pepper, diced
1/2 onion, diced
3 garlic clove, crushed and minced
1 shallot and/or chive, minced
1 tbsp tomato paste
2 tsp salt, or to taste
1/4 tsp black pepper, or to taste
1 thyme sprig

Boil beans in 6c water on medium heat for 1 hour.

Heat oil in pot. Fry bell pepper, onion, shallots and/or chives, garlic, and tomato paste for 5 minutes and add beans. Add salt, pepper and thyme to beans and lower heat. Cook for 30 minutes until beans get tender and liquid get creamy and thick.

Place in blender to puree and put back in pot and cook for additional 30-45 minutes.

Makes a dozen dumplings

2 1/4 c flour
1 tsp salt

Mix flour,salt and 1 cup of water, make sure there are no lumps. Using a spoon, shape the dumplings to desired shape and size, then add to boiling sauce or any other boiling soup of choice.

  • the proper names for the little floour balls in KREYOL are BOY and DOMBRE/donbre
