Only 5 ingredients stand between you and some delicious creamy (almost raw) vegan ice cream: Cashew nuts, cacao powder, vanilla extract and maple and agave syrups (vegan chocolate chips optional.) Even a picky 7-year old will love it. Enjoy!

p.s. The ice cream is 90% raw because maple syrup is typically processed with heat above 115F degrees.

p.s.s. Oops! Made a mistake when I answered a posted question below - must have been zoning out! I'm using the Blendtec blender. Although Vitamixs are great too! I wrote a review comparing the two on my blog here: http://thelabrawtory.com/2010/02/22/vitamix-vs-blendtec-showdown/

The ice cream maker is the Panasonic BH-941P Ice Cream Maker. It's very easy to use and compact. Just don't put too much "batter" in it because then it won't freeze sufficiently.
But I believe this model ice cream maker has been discontinued. :(

  • I just wondering how long you left it in the freezer. i tried making some today with the same panasonic maker and it came out very hard and icy..maybe i left it in there too long??

  • I've made choc avo pudding which would prob work! Give it a try:

    2 ripe avocados

    1/4 cup agave

    1/4 cup maple syrup

    1/2 powdered cacao

  • OMG I just finished making this and it is REALLY good! I have been searching for a good soy-less vegan ice cream, and this one hits the spot.

    I used all maple syrup (rather 50-50 mayple/agave). You definitely need to have a high speed blender like you said, because I put it in a cheap food processor and it wasnt creamy at all (and was quite gritty from the cashews). After transferring it to my high-speed blender it made it pretty creamy :) THANKYOU!!! :D

  • This Icecream is Dairy free and it healthy but also good for people who can't have dairy product it good for Lactose Intolerant :D
