  • great idea ...i'd like to try this.....whats in the sugar? and what temp does it need to be.

  • @drummergirl64 It's just caster sugar. Heat it in a pan until all the sugar crystals have dissolved and it goes a nice caramel colour. Let it cool slightly until it's the consistency of syrup and then scoop up a spoonful and weave backwards, forwards and around a ladle that's been lightly oiled with olive/rapeseed oil. The sugar will set instantly, twist the ladle onto your hand to remove your sugar basket. Take great care when working with molten sugar, it's approx 150 degrees.

  • Darling, most of us home cooks do not have a blow torch. We need another recipe which can be used just on the stove top.

  • Mini blow torches for the kitchen just like the one Nigel is using in this video can be purchased on the high street for about £5.00

    If you prefer not to use one then you could simply put your sugar covered bananas on a baking tray under a hot grill until they caramelise.
