@drummergirl64 It's just caster sugar. Heat it in a pan until all the sugar crystals have dissolved and it goes a nice caramel colour. Let it cool slightly until it's the consistency of syrup and then scoop up a spoonful and weave backwards, forwards and around a ladle that's been lightly oiled with olive/rapeseed oil. The sugar will set instantly, twist the ladle onto your hand to remove your sugar basket. Take great care when working with molten sugar, it's approx 150 degrees.

Darling, most of us home cooks do not have a blow torch. We need another recipe which can be used just on the stove top.

Mini blow torches for the kitchen just like the one Nigel is using in this video can be purchased on the high street for about £5.00
If you prefer not to use one then you could simply put your sugar covered bananas on a baking tray under a hot grill until they caramelise.
