It's because the iOS Facebook client recompresses the video and uploads it as 720p with a very low bitrate. That's why the video is not as sharp as on my iPhones's screen. But to be honest 1080p on a mobile is kinda useless, because you only can take advantage of that high resolution under very bright lighting conditions. The digital noise which occurs for example indoors is decreasing the resolution. That's why I use ProCamera to record 720p on my iPhone 4s usually (also saves space)...
