Well, here's my "Vice City" stunting video, at last. No cheats nor modifications used, as always.
This video features only bike tricks. Top-down scene is from Vice City in "GTA 1". Credits scene is filmed inside a building in "GTA: Vice City" with no way to enter or exit - I ended up in there during stunting due to a bug (i went through a wall XD).

its funny cause when i do the things you do in this video like hit a taxi to make your bike rotate 1080 degrees, my guy falls off and goes 20 feet :p

You need to learn how to balance your bike properly. To successfully bump from a vehicle, you need to approach it with a wheelie (leaning toward the back of the bike, so it gets on it's rear wheel). Sometimes you'll have to start leaning forward at the last moment before the impact in order not to crash (depends on the vehicle). I experimented with most of game's vehicle's to see which ones are good for bumping and I noticed that Caddies give best spins, while Ponies seem easiest to bump from.
