The game plan: Bev Eggelston, founder of EcoFriendly foods, will donate local swine. Artists from Tattoo Paradise will then tattoo Wilbur the pig. No, you will not die or even poison yourself by eating tattooed pork, as participating artists are using all-natural cuttlefish ink (another EcoFriendly Foods contribution). Once the piglets are inked up, chef Nick Sharpe from Ba Bay will prepare them in modern Vietnamese fashion: one course features pork mousse and egg yolk dumplings in broth with smoked hock and celery hearts.
