  • It can last months in the freezer -- from 3 to 6 months. Label carefully so that you know what it is. Best to freeze in usable amounts -- 1/2 cup to 2 cups or more.

    If you don't have scraps, or enough, of them you can add whole vegetables but I see making stock as recycling at its best. And you can compost the remains.

  • Chicken stock is the same process but you have to, of course, put chicken in. And you have to make sure that the chicken is cooked all the way through.

  • In India, I believe, they use what they have -- all of it. Here we can be more particular.

    Also, if you were using cabbage and cauliflower in what you were making, which they do often in India, it wouldn't matter.

    I like my stock to be all-purposed and without any "stinky" (sulfury) notes.

    It's always completely up to you.

  • hmmm.... the Indian guy who made vegetable stock put cabbage and cauliflower in, but you said not to do it....

  • I am not vegan, but was wondering if the process would be the same for a meat stock like chicken?
