Hi GialloZafferano viewers and welcome to our kitchen. I'm Deborah and today we'll be making a traditional Milanese main dish that's very simple to prepare: Chicken Cacciatore. Let's see what we'll need:
• 1 2 and ½ pound chicken
• A bunch of parsley
• 1 clove of garlic
• 1 onion
• 2 carrots
• 3 ribs of celery • ½ cup of olive oil
• 14 oz of tinned peeled tomatoes
• A sprig of rosemary
• 1 cup of red wine
• Salt and pepper to taste.
OK, let's prepare our chicken.
First of all, wash, dry and cut the chicken into pieces. Now, place the pieces in a pan of hot oil to brown off for at least 10 minutes.
Now, add to the chicken the diced onion and garlic, diced carrot and celery, the rosemary, a good pinch of salt, and the pepper. Let it cook for another 15 minutes.
After that add the red wine to the chicken. When it cooks off, it's time to add the tomatoes cut into pieces. Cover it up and let it simmer on a low heat for at least a half an hour. If it starts to look dry, just add a bit of broth or water as needed.
After everything is cooked, add the minced parsley to finish and you're ready to serve your chicken cacciatore. From GialloZafferano, buon appetito and see you next ti

  • not brown, not tasty looking at all. Why didn't you remove the chicken from the pan and then caramelize the veg? Looks bland and rubbery.

  • @PABSTMAN138 'cause it's not the original recipe, the flavours of meat and vegetables should blend together... anyway, it doesn't come out bland or rubbery at all!

  • I was wondering where you film these. Is it a cooking school of some sort or just somebody's kitchen? I think the recipes are very good and the production value is remarquable!

  • i don't want to use wine or any alcohol.can it be replace by other ingredient?any suggestion

  • @maysih87 Use non-alcoholic wine if you can find it. Otherwise try without, even if the recipe should need it

  • @maysih87 Yes. Try using Balsamic Vinegar / Water or stock (Lo or No Salt!) in a 1/3 & 2/3 ratio instead of the Wine; You don't use the best stuff for this either. Regular Balsamic will do fine.
