Recipe:

Serves 4
1 Can whole kernel corn (15 oz.), drained
1 Can black beans (15 oz.), rinsed and drained
4 green onions (white part only), chopped
1/4 Cup chopped fresh cilantro
2 Tablespoon fresh lime juice
1/2 Teaspoon Cajun seasoning, plus 1 ½ teaspoons for salad
4 Tilapia fillets (6 oz. each)
1 Tablespoon olive oil
1. To make the corn and black bean salad: place corn in a large serving bowl.
Stir in black beans, green onions, cilantro, limejuice and 1 1/2 teaspoons Cajun
seasoning; set aside.
2. Brush fish on both sides with oil and sprinkle with remaining 2 tablespoons
Cajun seasoning. Heat a Nonstick Skillet over Medium High Heat for 1 minute.
Sear the Tilapia for 3 to 4 minutes on each side or until fish flakes with a fork.
Serve fish with corn and Black Bean Salad. Garnish with cilantro leaves and lime
wedges, if desired.
Wine Suggestion: Pinot Grigio or Sauvignon Blanc
