1.Cowabunga! - Originating as a greeting by Chief Thunderthud (the only Indian ever to have a moustache) to the Peanut Gallery on the 50's television program "The Howdy Doody Show!
2.a singular word expressing appreciation of an amusing physical action.
3.Positive, Good, Great, in an aspect greater than 'cool'.

This casserole was a must have an incredible entree to wow my dinner guests. One of my guests liked it so much he exclaimed Cowabunga and so the name stuck
The recipe has a lot of ingredients and steps, but it is actually very easy. The nice part is that the puff pastry and the filling base can be made in advance. You can spend less time in the kitchen and more time with your guests and still present an awesome, delicious entree and your guests will yell COWABUNGA!

COWABUNGA CASSEROLES

Ingredients
1 8 oz package Philadelphia Cream Cheese room temperature cut into small pieces
1 Package Puff Pastry Sheets (2 sheets) thawed
¼ lb. small portabella mushrooms chopped
¼ C - unsalted butter
½ C - onion chopped fine
3 - Cloves garlic minced or less or more to taste
1 Tbsp olive oil
¼ C dry white wine
1 Tbsp. heavy cream
1 tsp. chopped parsely
½ lb cleaned peeled and deveined small raw shrimp
½ lb. crab meat or crab meat substitute
1 Tbsp. prepared cocktail sauce (or more to taste)
Salt and Pepper to taste.
2 4 ramekins


Preparation:
Preheat oven to 400 degrees
1.Unwrap puff pastry sheets unroll flat, using rolling pin flatten out the creases and cut 2 circle to match ramekins
2.Place cutouts onto a parchment sheet and bake until puffed and just golden about 10 minutes remove from pan and cool. (can be done in advance, wrap when cool and store in dry place) Reduce heat to 350 degrees.
3.While the puff pastry is baking in a saucepan melt together butter and olive oil add the onions and garlic and sauté until translucent.
4.Add the white wine and stir until reduced and scrape up brown bits, add the heavy cream and the prepared chili sauce, taste and adjust seasoning.
5.Add the cream cheese and melt and stir into the mixture.
6.Remove from heat.
7.Add shrimp, chopped mushrooms and the crab meat or substitute to the warmed cream mixture return to heat and stir until shrimp just turn pink and adjust seasoning.
8.Fill the prepared ramekin with the warm mixture, cover with foil and bake for 10 minutes
9.Remove from oven and place the baked puff pastry circles on top and return to oven for 5 minutes.
10.Remove from oven, plate, serve and enjoy

Makes 2 servings (can be doubled)
Prep time: 5 minutes chopping, measuring ingredients
Cooking time: 10 minutes for puff pastry and 25 minutes baking

  • I was doing a search for crab recipes and ran across your video. Great job! So, I clicked over to your channel, expecting to see a whole plethora of great videos, and was surprised that there weren't any. I think you're a natural and should make more!

    Now I'm off to search for more recipes...I was out at Bodega Bay yesterday and I have 2 lbs. of shelled crab (straight off the boat...one of the perks of having a brother as a commercial fisherman).

    Hope to see more videos!!
