holy~~~~~how to make the hand and legs like that?

Make a standard set of arms or legs. Remove the hands or feet.  Hold alt on the keyboard and click on the flesh in between two joint ball things. Now, after the joint is copied, hold ctrl. Add the copied limb to the stub of the joint and release. Viola, 3+ jointed limbs :D You can also use ctrl to remove joints at the end of the arm without removing the entire limb. Hope this helps.

I forgot to mention: When copying a joint with the alt key for making multiple jointed limbs, it's best to copy the joint closest to the end of the limb.
