This is a video of a Chinese Kungfu tea ceremony performed by Fujian tea master Sanshu that we watched during our holiday in July. Pretty amazing stuff! Red Cloak Tea was very nice too :)
@schdave Because it isn't tea yet. He pours the hot water first to open up the tea leaves, then gets rid of the water to allow the leaves to open, and then finally lets the tea steep in the pot. The first bit of "tea" is always thrown away.
@LaddieGalicia the reasons to pour hot water on the clay pot is to keep it warm when brew… outer temperature can affect the temperature of the tea… and it also use to be a timing guide… when your pot is dry… it means it is ready… when the water is not hot enough it take longer time to brew as well as drying the pot… this can ensure a constant taste of the tea….
