Escoffier organized the kitchen into a brigade system. That was important of course, made alot of difference for both the cooks and the diners. But, he is getting way too much credit for recipes and techniques. He may have put them into books and organized them, but they were around before him, yet everyone thinks he invented all this stuff. BS, what about the guys before him? what about Careme? and 100's of other guys. Sometimes history records leave all this kind of thing out.
