And, like classic Italian brodo, the method is consistent and avoids common mistakes. 4 hours on low makes sense in this case because you never want use too much heat with chicken and its broth. Otherwise do the soup in a Dutch oven and toss the whole pot into a low heat oven all day long. Thanks for the great video.
