  • I enjoy the flavor of olive oil in my cooking, so I have a tendency to use quite a bit. You certainly don't need as much as I used when cooking with a non-stick pan, it just a matter of personal choice.

  • You can eat any fish raw, but there are certain grades of fish, and you can't eat just any fish you find at the super market raw. The fish the Japanese use in Sushi is typically extremely fresh and well kept, so serving it raw is not dangerous.

  • true. i think it is rare to see it without cure. most local sushi bars do buy cured fish..
