Tried this last night and was very happy with the result. I used crimini (baby portabellos) mushrooms instead of the button mushrooms for an earthier flavor. Other then that I followed the recipe as seen in the video. The pan sauce really turned out well. Chef John was spot on...the vinegar adds a great note to the flavor. I used the sauce as gravy on Chef John's mashed potatoes (Yum!), with a small side salad. Simple, easy, delicious - I will be making this for guests soon. TY CJ.
