I cook a lot of turkeys, and this is how I "carve" a bird. I work from the bottom up, working the turkey upside-down. I use my hands mostly, to get at much of the good meat which is inaccessible with a knift. The meat it put into various bins based on us, and at the end, I'm left with two whole breasts, which I can easily wrap in plastic wrap, and slice later for sandwiches. This is the way I get as much meat as possible. Not suggested while the turkey is still too hot to work with.
The musical accompaniment is John Lurie - "Stink (short version)" from the Get Shorty soundtrack.
