another that you could prepared this course with makin an roux ( heat skillet w hot oil and pour flour until it becomes an golden brown and begin adding your other items like onion , celery, green pepper, green onion or red onion then once cook down add your crawfish and shrimps for them to saulte . then your finish you dont have to add mushroom soup

use yellow onion and instead of cream of mushroom use a dark roux for the thickener, it looks better and brings a nutty flavor to etouffee and is more traditional
