This dish uses the weighted grilling technique for cornish hens, often done with bricks, but I use a sheet pan weighted with a cast iron skillet. This technique yields a crispy skin and reduces the cooking time in half versus conventional roasting. I'm also making a delicious cauliflower gratin with a cheesy bechamel sauce and topped with smoked, gouda, manchego and sharp cheddar cheeses. Also served with a fresh avocado salad with baby spinach. I'm also experimenting with fast motion video to demonstrate the entire cooking process in a short video format.
