Meatloaf is one of my top favorites and this one is easy to make because you mix it in the pan that you are going to bake it in. It is also easy to just put the potatoes in the oven at the same time the meatloaf is cooking. Now some of you may think meatloaf is boring but when you put this with this gorgeous salad-you look like a gourmet cook! The other great thing about this meal is you can prepare it in advance and have it ready for an adult to pop it in the oven if you are too young to use the stove. The same goes for the salad-if you are too young to use a knife-let an adult chop the vegetables and you can do the assembly! My favorite part of this meal is really the salad. It is fun to assemble. It also has ingredients that are a little fancy and different. Have you ever tried hearts of palm-they are good. If you dont have a can of palm on had you can also make substitutions like adding black olives or just add the other half of the cucumber. Parsley makes the salad really taste fresh. If you dont have this fresh herb on hand just sprinkle a teaspoon of dried parsley on top-it works too! Also-if you like your almonds toasted-just put them in a small pan with a teaspoon of olive oil until they are toasty. Grandmas Dressing recipe is in the Recipe section of the website. This dressing is a must with this recipe so dont overlook this very important ingredient. My estimated cost of the meal is $2.75 per person and my estimated preparation time is 30 minutes.
