you can burn these on regular DVD-R discs like Wii games/backups right? or do you need them mini ones. (I know, dumb question)

Yep, regular sized DVD-Rs do the trick. I don't even know if the miniature ones would work, never tried it.

stupid question.... do you need the gamecube memory card to save the games or the sd card

Yep, saves go on the GameCube memory card; the SD slot is only available in Wii mode, GameCube games run in GameCube mode.

does anyone know how to use a FAT (WBFS) USB on usb loader? I get the option to choose a game but it freezes and a black screen comes up. I just purchased a 128gb kingston usb and i having this issue.

Other than that, my other usb works fine and its a NTFS (WBFS)

This thing sucks. I don't understand how there's just one series of games that don't work, and that's the PSO series. :( I'll never get to try the card game.
