You want to know why your Nunchuk messes up like that? When you loose connection if you hold the stick to any direction as it reconnects that is set as the default setting. Ie if you're holding it to the left when it connects again the control things that the left is default and center so you'll be constantly running to the left.
So just make sure you're not moving the stick when the control reconnects and it wont happen again.
