The delay between ears is only a small part in recognizing where sounds are comming from.
The asymmetric outer ear causes reflections that vary with angle; it behaves quite like a comb filter. The brain does the equivalent of taking a real time fourier transform of the sound and identifying a series of notches in the frequency response curve that correspond to an elevation.
You're brain is also ignoring, mentally cancelling out lots of unwanted sounds, this is even more amazing.
