can we choose between sheva and chris everytime you play the game/each mission or just the first time . And one more question : do we have to share the ammo with our partner ? Another question : will partner be with us all the time ??

if I remember correctly, you can only change the character if you end the game and re-choose the chapter. I changed the character during this walkthrough so it can't be too hard. The first playthrough you can only play as Chris (if you play single player)
You can give ammo to your partner but you don't have to. The ammo the character picks up only stays with them.
Partner will be with you all the time.
Infinite ammo can be unlocked to every weapon.
