I've made my own wontons and egg rolls. But the best wonton soup I've had came from a Chinese restaurant where they cooked it much like shown here or another youtube vid. Then it was topped with these strips of Chinese barbequed pork (uses a special pork cut and not American style barbeque sauce, makes it coated in red but not gooey and sticky, and I think they minced the green onions the long way, about 1-1/4 inch strips, both the green and the white part if I remember that right.
