Air drying raw-meat is the way that jerky was originally made by the Native American Indian did this for a long time and still do today, I used a old flint knife or flint scraper to cut the meat, The meat loses moisture then begins to dry up,In the summer time they would make a fire using wood for trees that bear fruit or nut best wood for smoking the meat and keeping bug's away for the meat like cold smoking,Old way to dehydrate venison meat or buffalo meat,cow meat,steer meat,I seasoned the deer jerky with salt I dug up from the great salt plains in northern Oklahoma,The Garlic I used for seasoning grows in the wood's it;s a powerful natural antibiotic and a natural insect repellent ,Here's link's to some old photo's of drying raw-meat long a go, http://www.old-picture.com/indians/Indian-Women-Drying-Meat.htm or http://www.archives.gov/research/native-americans/pictures/select-list-061.html

  • Hey Tim this is one of my favorite videos I was wondering if you smoked the meat with a fire under it if not I didn't know you could make jerky just from leaving the meat hanging is it because of the salt ??

  • @hollym091 The jerky loses it's water then becomes dehydrate the salt help preserve the jerky,One can smoke it over a fire to speed the drying up the smoke will help preserve it I like useing wood for trees that bear fruit or nut best wood for smoking the meat.
