Hi. I have the same smoker and am going to smoke prime rib tomorrow the 1st 2012. My question is what temp did you stay at for the 6 hours? We would like our prime rib a bit more well done. What temp would you recommend for medium well? Thanks

@711Smoker I had responded from my iPad, but see that didn't go anywhere! Sorry..hope your Prime Rib worked out. The smoker temp was set at 265, but didn't really get much over 210. It's all about internal temp. 140 is medium, so you may want to pull roast at between 135 and 140 because temp will continue to rise at it rests for final 30 min loosely covered with foil leaving final temp around 145 for medium well.

Looks delicious. Santa just gave me a Bradley and videos like this get me all antsy. Wish there was a shot of the roasts before they went into the smoker. Happy eating.

@Splatted604 Yah..oversite on my end. Basically cut in half as you saw, rubbed lightly with oil and then the coffee/house of q rub worked in. It actually looked very similar to the cooked picture...the run was pretty dark becuase of the coffee. One half of roast per tray, look 2 trays out of smoker for added room. Bone side down. Happy smokin!!
