étouffer in french actually means "to choke", so étouffée would to something that is being choked and that in a feminine noun

@thePowerPlant Thanks much! It was a pretty dark roux, but it was probably the camera. Still, I was going for a more chocolate color than something super dark. Just my pallet though!

My best friend is alergicto shell fish, do you think if I made this I could subb say, cat fish or maybe nile perch or say grouper? basicly a light white fish
